The first Carcass Club of 2026
CARCASS CLUB
A very special take on the classic Flat Iron experience, the Carcass Club is a series of a one-off events that gives you the chance to try some of the rarest, most incredible beef out there.
Join us on Tuesday 24th February for a very special night celebrating a rare and ancient breed of cattle - Shetland.
We have only served a handful of Shetland over the years at Flat Iron and each time they have yielded the most delicious beef. This 30-month-old steer was cared for by an Ayrshire-based horse trainer who used the cattle to help keep the land under control for the horses, so it has been well-fed on nothing but grass. This diet, their small size, a covering of creamy ivory-coloured fat and fine even marbling all come together to produce an exceptional steak - we can’t wait to share it with you.
