Our Shoreditch restaurant is home to a spectacular 15-foot wood-ember hearth, where we spit-roast special cuts from the traditional breeds of the Flat Iron Herd using a 250-year old reconditioned clockwork mechanism. Building the hearth and the spit-roast was literally a labour of love to try and recreate a lost flavour that we used to be famous for as a nation.
Downstairs in the basement, hidden away from our guests, is our indispensable chip kitchen, where we laboriously turn sacks of Cambridgeshire spuds into the golden crispy morsels of joy served at all our restaurants.
